Salatat jarjeer is an arugula (rocket) salad typical of Middle Eastern cuisines. It's tangy and flavored with sumac and lemon juice.

Ingredients

  • 4 oz. arugula rinsed and well dried, fresh
  • 4 walnuts roughly chopped, kernels
  • ½ red onion thinly sliced into strips, medium
  • salt
  • black pepper , freshly ground
For the dressing
  • 1 lemon , freshly squeezed
  • 1 tablespoon sumac
  • 3 tablespoons olive oil
  • salt
  • black pepper , freshly ground

Instructions

  1. In a bowl, combine the onion strips, sumac, olive oil, lemon juice, salt and pepper. Let sit for 10 minutes.
  2. In a salad bowl, combine the arugula and crushed walnuts.
  3. Add the dressing over the walnut and arugula and toss gently.
  4. Taste and, if necessary, add salt and pepper, and possibly lemon juice if the mixture requires more acidity.
