Salatat jarjeer is an arugula (rocket) salad typical of Middle Eastern cuisines. It's tangy and flavored with sumac and lemon juice.

Ingredients
- 4 oz. fresh arugula , rinsed and well dried
- 4 walnut kernels , roughly chopped
- ½ medium red onion , thinly sliced into strips
- salt
- black pepper , freshly ground
For the dressing
- 1 lemon , freshly squeezed
- 1 tablespoon sumac
- 3 tablespoons olive oil
- salt
- black pepper , freshly ground
Instructions
Dressing
- In a bowl, combine the onion strips, sumac, olive oil, lemon juice, salt and pepper. Let sit for 10 minutes.
- In a salad bowl, combine the arugula and crushed walnuts.
- Add the dressing over the walnut and arugula and toss gently.
- Taste and, if necessary, add salt and pepper, and possibly lemon juice if the mixture requires more acidity.
