Ingredients

Salmon Blinis Ingredients
  • 1 pack (260g) of The Saucy Fish Co. Salmon with Chilli Lime and Ginger dressing fresh or defrosted
  • 1-2 tbsp low fat mayo
  • 16 blinis
  • assorted toppings: cucumber slices, beetroot pureé, sliced spring onions, sesame seeds, watercress, etc.

  1. Preheat oven to fan-assist 170 C / 190 C / gas 5 / 375 F.
  2. Open packet, remove salmon and place on baking tray. Set the dressing aside.
  3. Bake the salmon for 20 mins, then remove and let cool.
  4. Transfer the cooled salmon to a bowl and lightly mash (don’t mash all the way, nice to have some big chunks).
  5. Add low-fat mayo and the chili lime and ginger dressing from the fish, and mix to combine.
  6. Just before serving, assemble the blinis with the salmon mix and various toppings.

Notes

  • There are 2 Freestyle SmartPoints in one serving of these salmon blinis.
  • Use a selection of super easy toppings like cucumber slices, beetroot pureé, spring onions slices, sesame seeds, watercress to top your salmon blinis.
  • To keep this starter truly fuss-free, I use store-bought blinis. But if you prefer, you can certainly make your blinis from scratch.
  • For those who prefer a little heat, you can add more chilli or a couple of dashes of hot sauce to the salmon mix.
