Salmon Kabobs

Ingredients

  • 1.5 lbs Salmon fillet cut into 1-inch cubes
  • 2 tablespoons lemon juice
  • 1/4 cup olive oil plus more for drizzling
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried dill
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 red onion cut into chunks
  • 2 large lemons thinly sliced
  • 1 zucchini cut into 1/2-inch slices

Instructions

  1. In a large bowl, whisk together olive oil, salt, pepper, dill, thyme, cumin, lemon juice, and garlic powder.
  2. Add salmon cubes to the marinade and gently toss to coat. Let marinate for 20 minutes.
  3. Place zucchini and onion in a bowl and drizzle with a little olive oil. Sprinkle salt and pepper to taste. Toss to coat.
  4. Thread the marinated salmon, lemon slices, zucchini, and red onion onto skewers, alternating between each.
  5. Preheat grill to medium-high heat. Grill kabobs for 7-10 minutes, turning occasionally, until salmon is cooked through and vegetables are tender.
