Salmon Marinade with Lemon, Garlic, and Herbs

This marinade blends olive oil, lemon juice, garlic, and fresh herbs like basil, parsley, and rosemary with a touch of honey and red wine vinegar to enhance the natural flavor of salmon. The fish soaks in the bright and herbaceous mixture, absorbing the tang from lemon and vinegar balanced by honey's mild sweetness. Ingredients

  • ½ cup olive oil
  • ¼ cup lemon juice fresh
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 4 teaspoons garlic about 4 large cloves, minced
  • 2 tablespoons basil chopped (or sub with 1 teaspoon dried basil, fresh
  • 1 tablespoon parsley chopped (or sub with ½ teaspoon dried parsley flakes, fresh
  • 1 tablespoon rosemary chopped (or sub with ½ teaspoon dried rosemary, fresh
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper freshly-ground
  • 1 ½ lbs. salmon cut into 4 pieces

Instructions

  1. Combine all of the marinade ingredients (except for the salmon) in a large jar with a lid, in a small bowl, or in a large glass measuring cup. Shake vigorously or whisk until completely combined. Set aside about ¼ cup of marinade for later.
  2. Place salmon filets and remaining marinade in a large zip-top plastic bag or in a glass container. Place in the refrigerator to marinate for about 30 minutes (and not longer than 1 hour).
  3. Heat the coals or a gas grill to medium heat. Place the marinated salmon on the grill. Cover and grill for 4-5 minutes per side. Brush the salmon with the reserved ¼ cup of marinade a couple of times as the fish cooks. The salmon is done when it flakes easily with a fork.
  4. Serve the grilled salmon with an extra squeeze of fresh lemon juice and/or additional chopped fresh herbs for garnish. Season with additional salt and pepper to taste.

Notes

  • Marinate the salmon no longer than 1 hour to avoid affecting its texture.
  • To broil, place salmon on a broiler pan and cook 5 minutes on one side, then 4-6 minutes on the other until flaky.
  • Baking at 400°F for 8-11 minutes works well; broil briefly at the end for a crisp finish if desired.
