Ingredients

  • 3 cans salmon
  • ½ cup whole wheat breadcrumbs
  • ¼ cup onion finely chopped
  • ¼ cup bell pepper finely chopped
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 large eggs lightly beaten
  • 2 tbsp olive oil for frying

Instructions

    Cup of Yum
  1. In a large bowl, combine the flaked salmon, breadcrumbs, chopped onion, chopped bell pepper, minced garlic, chopped parsley, lemon juice, Dijon mustard, salt, and black pepper. Mix well to combine.
  2. Add the beaten eggs to the salmon mixture and mix until everything is well combined and evenly moistened.
  3. Shape the mixture into patties, about ¼ to ½ inch thick. You can make them smaller for sliders or larger for regular-sized patties.
  4. Heat olive oil in a large skillet over medium heat.
  5. Carefully place the salmon patties in the skillet and cook for about 4 to 5 minutes on each side, or until they are golden brown and cooked through. Flip them gently to avoid breaking.
  6. Once cooked, transfer the salmon patties to a plate lined with paper towels to absorb any excess oil.
  7. Finally, serve the salmon patties warm with a side of homemade tartar sauce, lemon wedges, or your favorite dipping sauce.
