Salmon with Strawberry Salsa

Ingredients

  • 3 cups strawberries diced into small pieces
  • ½ red onion diced into small pieces
  • ⅓ cup basil cut into ribbons
  • ⅓ cup tarragon cut into ribbons or diced
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • 4 salmon fillets with skin on 150 grams per fillet
  • 1 pinch salt

Instructions

  1. Bring your salmon to room temperature and season with salt on both sides of the salmon.
  2. Start with making your strawberry salsa by combining the diced strawberries, red onion, basil, tarragon, and white wine vinegar. Mix and set aside.
  3. To cook your salmon, in a cast iron on medium heat, add in your olive oil and then place the salmon fillets into the cast iron, skin side down. Cook for 2-3 minutes before flipping it and letting the other side cook for 2-3 minutes as well.
  4. Top off the salmon with the strawberry basil and serve with your grain of choice if you chose to.
