Traditional in Brazilian homes, chicken salpicão is a very frensh and simple salad, served for lunch or dinner.

Ingredients

  • 2 lb chicken breast , cooked and shredded
  • 2 carrots , coarsely grated
  • 10 oz. black olives , pitted
  • 1 red bell pepper , cut into thin strips
  • 2 Red Onions , grated
  • 6 oz. currants
  • 1 granny smith apple , unpeeled, cut into strips
  • 2 limes , squeezed
  • 5 tablespoons extra-virgin olive oil
  • 3 tablespoons chopped flat-leaf parsley
  • 2 tablespoons mayonnaise
  • 10 oz. Batata Palha , very thin potato chips

Instructions

  1. Plunge the grated carrots into a pot of boiling salted water and cook for 1 minute over high heat. Drain and reserve.
  2. In a bowl, place the shredded chicken, cooked carrots, olives, red peppers, grated onions, raisins, parsley and green apple.
  3. Then add the lemon juice, olive oil and mayonnaise. Mix well.
  4. Place in the refrigerator and let cool for 1 hour.
  5. Remove the salad from the refrigerator and add the Batata Palha.
  6. Serve immediately.
