Traditional in Brazilian homes, chicken salpicão is a very frensh and simple salad, served for lunch or dinner.

Ingredients
- 2 lb chicken breast , cooked and shredded
- 2 carrots , coarsely grated
- 10 oz. black olives , pitted
- 1 red bell pepper , cut into thin strips
- 2 Red Onions , grated
- 6 oz. currants
- 1 granny smith apple , unpeeled, cut into strips
- 2 limes , squeezed
- 5 tablespoons extra-virgin olive oil
- 3 tablespoons chopped flat-leaf parsley
- 2 tablespoons mayonnaise
- 10 oz. Batata Palha , very thin potato chips
Instructions
- Plunge the grated carrots into a pot of boiling salted water and cook for 1 minute over high heat. Drain and reserve.
- In a bowl, place the shredded chicken, cooked carrots, olives, red peppers, grated onions, raisins, parsley and green apple.
- Then add the lemon juice, olive oil and mayonnaise. Mix well.
- Place in the refrigerator and let cool for 1 hour.
- Remove the salad from the refrigerator and add the Batata Palha.
- Serve immediately.
