  • 2 tablespoon olive oil
  • 1 onion chopped, medium Vidalia
  • 1 teaspoon garlic minced
  • 1 fire roasted tomatoes 14 oz. can
  • 1 diced green chilies 4 oz. can
  • 3 oz. tomato paste
  • ¾ teaspoon salt
  • ½ teaspoon cumin
  • black pepper to taste
  • 4-5 egg large
  • 3-4 green onion sliced
Ingredients for Quick Grits
  • 3 cups water
  • ¾ cup grits quick cooking
  • ¾ teaspoon salt
  • 1 tablespoon butter
  • ½ cup cheddar cheese shredded, reduced fat, extra sharp
