Ingredients
- 2 tablespoon olive oil
- 1 onion chopped, medium Vidalia
- 1 teaspoon garlic minced
- 1 fire roasted tomatoes 14 oz. can
- 1 diced green chilies 4 oz. can
- 3 oz. tomato paste
- ¾ teaspoon salt
- ½ teaspoon cumin
- black pepper to taste
- 4-5 egg large
- 3-4 green onion sliced
Ingredients for Quick Grits
- 3 cups water
- ¾ cup grits quick cooking
- ¾ teaspoon salt
- 1 tablespoon butter
- ½ cup cheddar cheese shredded, reduced fat, extra sharp
