Salsa Poached Eggs & Cheese Grits

Ingredients

  • 2 tablespoon olive oil
  • 1 medium vidalia onion chopped
  • 1 teaspoon minced garlic 
  • 1 14 oz. can fire roasted tomatoes
  • 1 4 oz. can diced green chilies
  • 3 oz. tomato paste
  • ¾ teaspoon salt
  • ½ teaspoon cumin
  • pepper to taste
  • 4-5 large eggs
  • 3-4 sliced green onions
Ingredients for Quick Grits
  • 3 cups water
  • ¾ cup quick cooking grits
  • ¾ teaspoon salt
  • 1 tablespoon butter
  • ½ cup reduced fat extra sharp cheddar cheese shredded
