Salsa Taquera (Falso Guacamole)

Ingredients

  • 4-6 tomatillos husks removed
  • 1 medium white onion halved
  • 10 cloves garlic
  • 2 jalapeños stem removed
  • 1 serrano chile stem removed
  • 1 zucchini halved and quartered
  • 1 chicken bouillon cube
  • 1 small bunch cilantro
  • 1/2 cup vegetable oil

Instructions

  1. Place tomatillos, onion, garlic, chiles and zucchini in a dry, large skillet or comal over medium-high heat. Char vegetables and chiles several minutes until brown all over.
  2. Transfer to blender and let cool for several minutes. Add chicken bouillon cube, cilantro and vegetable oil. Cover and blitz until pureed and smooth. Season to taste.
  3. This is wonderful warm or chill. Serve with tortilla chips or use as you would any salsa.
