  • 5 cups kosher salt plus more to taste as needed
  • 1 clove garlic
  • Juice of 1 lemon about ¼ cup, or more to taste
  • ⅓ cup Tahini
  • pinch of cumin
  • ½ cup olive oil
  • 2 tablespoons fresh dill roughly chopped
  • 2 tablespoons fresh mint roughly chopped
