Salted Caramel Pecan Cookies Recipe

These salted caramel pecan cookies are the perfect blend of buttery salted caramel and nutty flavor of the pecan pieces. It is one of my very favorite cookies!

Ingredients

  • 1 1 cup butter softened
  • 1 1 cup packed brown sugar
  • 1 1 cup granulated sugar
  • 2 2 large eggs
  • 1 1 tablespoon vanilla extract
  • 3 3 cups all-purpose flour
  • 1 1 teaspoon sea salt
  • 3/4 3/4 teaspoon baking soda
  • 36 36 caramels cut into fourths
  • 1/2 1/2 cup Chopped Pecans or pecan pieces

Instructions

  1. Preheat oven to 350º F. Line rimmed baking sheet with baking mat or parchment paper.
  2. In a large bowl with an electric mixer, cream together butter and sugars until light and creamy, about 3 minutes. Add in eggs one at a time, mixing until completely incorporated. Add in vanilla.
  3. In a separate bowl, whisk together flour, salt and baking soda. Slowly incorporate the flour mixture into the butter and sugar mixture until well-combined. Stir in caramel and pecan.
  4. Scoop 1 tablespoon of cookie dough and drop onto prepared baking pan. Bake for 10-12 minutes, or until the cookies are lightly golden brown. Remove from the oven and allow to cool.
