  • 4 tablespoon ghee or butter
  • ¼ cup caster sugar
  • teaspoon ground cinnamon
  • ¾ teaspoon salt
  • 2 tablespoon neutral cooking oil generic cooking oil
  • cup popcorn kernels

Instructions

  1. Place the ghee/butter in a small bowl or jug and microwave for 20 seconds until melted.4 tbsp ghee/butter
  2. Measure the sugar, cinnamon, and salt into a large container with a lid (I use a 23 cup/5.2 liter Tupperware).¼ cup caster sugar1½ tsp ground cinnamon¾ tsp salt
  3. Clip on the lid, shake it to combine everything and set it to one side.
  4. Pour the oil into your biggest stock pan; make sure you have a lid for it.2 tbsp oil
  5. Turn the heat to medium and add 2 popcorn kernels to the oil.
  6. Heat the oil until the two kernels pop.
  7. Remove the two popped popcorns and pour the remaining kernels into the oil.⅔ cup popcorn kernels
  8. Place on the lid, shake the pan to distribute the kernels evenly, then remove the pan from the heat and count to 30.
  9. Return the pan to the heat and heat on medium/high with the lid on.
  10. Once the popcorn starts to pop, shake the pan well and slide it backward and forwards across the hob.
  11. Occasionally pull the lid slightly off to allow the steam to escape. Please don't move it off too far, or you will find you get a popcorn shower!
  12. Keep shaking and sliding until the popping slows to a couple of pops a second, then lift the pan above the heat and shake it again above the heat for 10 seconds.
  13. Turn off the heat and pour in the melted butter.
  14. Again give the pan a good shake.
  15. Tip the popped corn into your container of sugar, clip on the lid and shake to coat all the popcorn in the delicious salty-sweet goodness.
