Sarson Ka Saag (Mustard Greens)

Sarson ka Saag (Mustard Greens) is a traditional Punjabi dish prepared with slow-cooked mustard greens and spinach that's tempered at the end.

Ingredients

  • 2 lbs mustard greens
  • 1 lb baby spinach
  • 1 onion
  • 2 Inch piece of ginger
  • 20 garlic cloves
  • 4 serrano chillies
  • 2 cups water
  • 2 tbsps red chili powder (see notes)
  • 2 tbsps salt (see notes)
  • 2 tablespoon butter
INGREDIENTS FOR TEMPERING
  • ¼ cup cooking oil
  • ½ onion (see notes)
  • 10 cloves garlic (see notes)

Instructions

  1. Add all the ingredients and 2 cups of water to a cooking pot and cook covered on high.
  2. Once the mixture reaches a boil, reduce the heat and simmer on low for an hour.
  3. Then, uncover the pot, turn the heat up to high, and dry the excess liquid.
  4. Once the water is almost dry, puree the mixture in a food processor and then return it to the pot to finish drying it out.
  5. Check and adjust the seasoning and cook until there is no water left and you have a thick, dense mixture remaining in the pot. (see notes)
  6. Heat the ¼ cup oil and add the sliced onions and chopped garlic. (see notes)
  7. Saute them till they are medium brown, and then pour them along with the seasoned oil over the cooked saag.
  8. Serve the saag with a small dollop of fresh butter on top.

Notes

  • The spices - Pakistani food tends to be spicy, and as such, you may need to adjust the spices per your personal preferences.
  • The tempering - Slice the onions and garlic cloves into thin slices so they crisp up and brown quickly and evenly. These as well as the seasoned oil add loads of flavor to the cooked sarson ka saag.
