Ingredients

  • 2 large red onions , sliced
  • 2 yellow bell peppers , stemmed, seeded and cut into medium strips
  • 2 red bell peppers , stemmed, seeded and cut into medium strips
  • 4 green bell peppers , stemmed, seeded and cut into medium strips
  • 6 large tomatoes , peeled, seeded, and roughly diced
  • 2 cloves garlic , pressed
  • sunflower oil
  • salt
  • black pepper , freshly ground

Instructions

  1. Add ½ cup (100 ml) of sunflower oil into a sauté pan and heat it.
  2. Add the onion slices and sauté for about 10 minutes over medium heat, stirring frequently.
  3. Then add the peppers and garlic.
  4. Mix well, cover and simmer for 15 minutes over low to medium heat.
  5. Then add the tomato slices and cook for 40 minutes over medium heat, stirring occasionally, until the liquids have reduced.
  6. Towards the end of cooking, season with salt and pepper to taste, add ¼ cup (50 ml) of oil and cook over medium heat, uncovered, for another 5 to 10 minutes, stirring very frequently.
