Ingredients
- 2 large red onions , sliced
- 2 yellow bell peppers , stemmed, seeded and cut into medium strips
- 2 red bell peppers , stemmed, seeded and cut into medium strips
- 4 green bell peppers , stemmed, seeded and cut into medium strips
- 6 large tomatoes , peeled, seeded, and roughly diced
- 2 cloves garlic , pressed
- sunflower oil
- salt
- black pepper , freshly ground
Instructions
- Add ½ cup (100 ml) of sunflower oil into a sauté pan and heat it.
- Add the onion slices and sauté for about 10 minutes over medium heat, stirring frequently.
- Then add the peppers and garlic.
- Mix well, cover and simmer for 15 minutes over low to medium heat.
- Then add the tomato slices and cook for 40 minutes over medium heat, stirring occasionally, until the liquids have reduced.
- Towards the end of cooking, season with salt and pepper to taste, add ¼ cup (50 ml) of oil and cook over medium heat, uncovered, for another 5 to 10 minutes, stirring very frequently.
