Sausage and Peppers
This authentic sausage and peppers dish cooks Italian sausage links with onions and bell peppers in a buttery, wine-enhanced pan. The sausages brown first, then simmer until fully cooked, while the vegetables soften in butter and Italian seasoning. Optional diced tomatoes can add a saucy element. Ingredients
- 2 tablespoons olive oil
- 1 pound Italian sausage links
- 1 cup water
- 2 tablespoons butter salted
- 1 onion sliced lengthwise
- ½ teaspoon Italian seasoning
- 2 large bell pepper green, red, or orange, sliced lengthwise
- ⅓ cup white wine or beer
- 14.5 ounces diced tomatoes optional, canned
- 2 cloves garlic minced
Instructions
- Heat olive oil in a large skillet over medium heat. Brown sausages on all sides. Add water, cover, and simmer 10-12 minutes.
- Set sausages aside. Discard any remaining water.
- Add butter, onions, and Italian seasoning to the pan. Cook for 3-4 minutes, stirring until onions are slightly softened. Add peppers and cook 2 minutes more.
- Add wine, tomatoes (if using), garlic, and sausage. Cook for 3-4 minutes or until peppers are tender and sausages reach 160°F*.
- If desired, top with a sprinkle of fresh basil or parsley.
Notes
- Including diced tomatoes adds a saucy texture great for serving over pasta or with bread.
- Check sausage doneness with a thermometer: 160°F for beef/pork mixtures, 165°F for poultry-based.
