Sausage and Peppers
Description
Sausage and Peppers begins by browning Italian sausage links in olive oil, then simmering them covered with water to cook thoroughly. After removing the sausages, the pan is enriched with butter, onions, and Italian seasoning, cooking until the onions soften. Bell peppers are added to cook briefly before stirring in white wine, optional diced tomatoes, garlic, and the sausages to meld flavors and finish cooking vegetables until tender.
The dish combines the robust, seasoned sausage with sweet and slightly tangy bell peppers and onions, highlighted by garlic and wine. When included, diced tomatoes create a light sauce that ties the ingredients together. This approach balances meaty and vegetable components in a skillet meal.
Sausage and Peppers can be served on its own, alongside pasta, or accompanied by crusty bread to absorb the pan juices. It works well as a comfort food offering at lunch or dinner.
Using a meat thermometer ensures sausage reaches safe internal temperature—160°F for pork or beef-based, 165°F for turkey or chicken. Leftovers keep well refrigerated for up to 4 days and reheat safely on the stovetop or microwave.
Ingredients
- 2 tablespoons olive oil
- 1 pound Italian sausage links
- 1 cup water
- 2 tablespoons butter salted
- 1 onion sliced lengthwise
- ½ teaspoon Italian seasoning
- 2 large bell pepper green, red, or orange, sliced lengthwise
- ⅓ cup white wine or beer
- 14.5 ounces diced tomatoes optional, canned
- 2 cloves garlic minced
Instructions
- Heat olive oil in a large skillet over medium heat. Brown sausages on all sides. Add water, cover, and simmer 10-12 minutes.
- Set sausages aside. Discard any remaining water.
- Add butter, onions, and Italian seasoning to the pan. Cook for 3-4 minutes, stirring until onions are slightly softened. Add peppers and cook 2 minutes more.
- Add wine, tomatoes (if using), garlic, and sausage. Cook for 3-4 minutes or until peppers are tender and sausages reach 160°F*.
- If desired, top with a sprinkle of fresh basil or parsley.
Notes
- Including diced tomatoes adds a saucy texture great for serving over pasta or with bread.
- Check sausage doneness with a thermometer: 160°F for beef/pork mixtures, 165°F for poultry-based.
- Use caution when checking temperature as hot fat may spurt out.
- Store leftovers in an airtight container for up to 4 days; reheat thoroughly before serving.
