Sausage and Potato Skillet

This sausage and potato skillet recipe is meant to be a simple one skillet meal! It has tender baby potatoes, smoked sausage, peppers, and delicious seasonings that take it over the top. It's hearty, satisfying and loaded with flavor!

Ingredients

  • 12 ounces smoked sausage
  • 1 pound baby potatoes
  • 1 red bell pepper
  • 1 cup diced yellow onion, about ½ medium onion
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • ½ teaspoon Salt, or to taste
  • ½ teaspoon pepper, or to taste

Instructions

  1. Cut 12 ounces smoked sausage into ½-inch thick rounds. Cut 1 pound baby potatoes into 1-inch pieces and 1 red bell pepper into 2-inch long sticks.
  2. Heat 3 tablespoons olive oil in a large skillet over medium-high heat, add the potatoes to the skillet, and season with 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon parsley, ½ teaspoon salt,and ½ teaspoon pepper,.
  3. Cook the potatoes, stirring frequently to evenly brown until the potatoes are tender about 15 minutes. Remove the potatoes from the skillet and set aside.
  4. To the skillet add the sausage, 1 cup diced yellow onion,, and red bell pepper. Cook until the vegetables are tender, about 5 minutes.
  5. Add the potatoes back to the skillet with the sausage, stir, and cook everything together for another couple of minutes.
  6. Remove the skillet from heat and serve.

Notes

  • You can boil the potatoes for 5-8 minutes before cooking in the skillet to shorten the skillet cooking time.
