This sausage and potato skillet recipe is meant to be a simple one skillet meal! It has tender baby potatoes, smoked sausage, peppers, and delicious seasonings that take it over the top. It's hearty, satisfying and loaded with flavor!

Ingredients
- 12 ounces smoked sausage
- 1 pound baby potatoes
- 1 red bell pepper
- 1 cup diced yellow onion, about ½ medium onion
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon parsley
- ½ teaspoon Salt, or to taste
- ½ teaspoon pepper, or to taste

Instructions
- Cut 12 ounces smoked sausage into ½-inch thick rounds. Cut 1 pound baby potatoes into 1-inch pieces and 1 red bell pepper into 2-inch long sticks.
- Heat 3 tablespoons olive oil in a large skillet over medium-high heat, add the potatoes to the skillet, and season with 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon parsley, ½ teaspoon salt,and ½ teaspoon pepper,.
- Cook the potatoes, stirring frequently to evenly brown until the potatoes are tender about 15 minutes. Remove the potatoes from the skillet and set aside.
- To the skillet add the sausage, 1 cup diced yellow onion,, and red bell pepper. Cook until the vegetables are tender, about 5 minutes.
- Add the potatoes back to the skillet with the sausage, stir, and cook everything together for another couple of minutes.
- Remove the skillet from heat and serve.
Notes
- You can boil the potatoes for 5-8 minutes before cooking in the skillet to shorten the skillet cooking time.
