Ingredients

  • 4-6 smoked sausages such as kielbasa
  • 1½ pounds baby potatoes halved or whole if they're small
  • 3 medium bell peppers 1 each red, green and yellow
  • 2 medium Red Onions quartered
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • salt and pepper to taste
  • fresh parsley chopped, for garnish

  1. Preheat the oven to 400°F (200°C).
  2. Toss the halved baby potatoes, bell pepper strips, and onion wedges with olive oil, garlic powder, Italian seasoning, salt, and pepper in a large bowl until everything is well coated.
  3. Spread your seasoned veggies out on the sheet pan in an even layer. Take your sausages and nestle them amongst the veggies on the sheet pan.
  4. Transfer the sheet pan to the oven and roast for about 35-45 minutes, or until the sausages are browned and the potatoes are tender. Halfway through the cooking time, turn the sausages and stir the vegetables for even browning.
  5. Remove from the oven and let rest for a few minutes before serving. Garnish with fresh parsley or herbs of choice.

Notes

  • Choose your sausages wisely – Smoked kielbasa adds a lovely depth of flavor, but feel free to experiment with different types of sausages based on your preference.
  • Cut veggies uniformly – Ensure your potatoes and bell peppers are cut to similar sizes for even roasting.
  • Toss well for even seasoning – Give the veggies and sausages a good toss in the seasoning mix to coat them evenly, which ensures every bite is packed with flavor.
