Sausage Frittata
My Sausage Frittata with mushrooms is a totally satisfying 15 minute meal! Loaded with mushrooms and topped with lots of mozzarella, this frittata is so simple to make and perfect for any day of the week.

Ingredients
- 1 tablespoon butter
- 3 links sausages (about 6 ounces each) removed from casing
- 1 medium onion chopped
- 1 cup white mushrooms chopped, or cremini
- 6 large eggs beaten
- salt and pepper to taste
- 1 cup mozzarella cheese
Instructions
- Prep the oven. Turn the oven on to the broil setting. Position a rack in the middle of the oven.
- Cook the sausage. In a large skillet, melt the butter and add the sausage. Break the sausage with a fork as much as you can. Cook the sausage for a minute, it doesn't have to be completely cooked.
- Add veggies. Add the chopped onion and mushroom to the skillet. Sauté everything for 5 minutes until the onions soften and the mushrooms begin to brown. Season the mushrooms and sausage with salt and pepper.
- Add eggs and mozzarella. Pour the beaten eggs over the mushrooms and sausage in the skillet, do not stir. Cook the eggs, for just a minute and sprinkle the mozzarella over the top.
- Broil the frittata. Transfer the skillet to the oven and broil for a couple minutes, just until the top is nice and golden brown. Make sure to watch it carefully because it can quickly burn.
- Serve. Let the frittata cool slightly then garnish with parsley and chopped tomatoes if preferred and serve warm or at room temperature.

- Frittatas are typically served at room temp, so don’t worry about it being served hot. It will taste good no matter what!
- If you don’t have a broiler function on your oven, you can bake it at 375°F!
