Sausage Hash

This easy sausage potato hash is an amazing one-pot breakfast or dinner.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 1/2 cups diced white onion
  • 1 bell pepper seeds and ribs removed, chopped
  • 4 cups diced potatoes
  • 16 ounces bulk sausage
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons chopped parsley optional

Instructions

  1. Heat the vegetable oil in a large skillet. Sauté the onion, bell pepper, and potatoes until the potatoes are tender. Remove the vegetables from the skillet.
  2. Add the sausage to skillet and cook until the sausage has browned. Return the vegetables to the skillet. Season with salt and pepper and sprinkle with chopped parsley, if desired.
