Sausage Kale White Bean Soup

Loaded with veggies, sausage and beans, you will love this easy sausage kale white bean soup.

Ingredients

  • 2 Tablespoons olive oil
  • 1 pound ground mild Italian sausage
  • 1/2 yellow onion diced
  • 2 ribs celery diced
  • 2 carrots peeled and diced
  • 1 tablespoon minced garlic 
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 cans cannellini beans drained and rinsed
  • 4 cups chicken broth
  • 3 cups kale stems removed and chopped small
  • 1/2 cup Parmesan Cheese for serving

Instructions

  1. Heat the oil in a large pot over medium high heat.  Add in the sausage and brown into large pieces.
  2. Remove the sausage from the pan with a slotted spoon.
  3. Add the onions, celery and carrots to the pot into the sausage grease and sauté for 4-5 minutes until the vegetables are tender.
  4. Add in the minced garlic and cook for 1 minute.
  5. Add the sausage back to the pan.  Stir in the salt, pepper, beans, chicken and chopped kale.
  6. Bring the mixture to a boil.  Cover and reduce the heat to the low.  Cook for 10-15 minutes until the kale is wilted and cooked through.
  7. Serve warm topped with Parmesan Cheese and enjoy!

Notes

  • Refrigerate the leftovers in an airtight container for up to 5 days.
