Sausage Ravioli Filling Recipe

Ingredients

  • 2 tablespoons olive oil
  • 2 Italian sausages casings removed
  • 4 cups baby spinach chopped fine
  • 2 eggs lightly beaten
  • ½ cup ricotta cheese drained
  • ¼ cup Parmesan Cheese grated

Instructions

  1. Place a nonstick skillet over medium-high heat. Add the oil and sausage meat. Fry it until browned slightly, using a wooden spoon to break up the clumps.
  2. Add the spinach to the pan, stir frying until wilted. Remove to a bowl and set aside to cool completely.
  3. In a medium bowl, mix the eggs, cheese and sausage mixture. Cover and refrigerate, using as directed in your ravioli recipe.
