Ingredients

  • 12 oz chicken sausage usually 1 package is close to that
  • 2 zucchini squash medium sized
  • 1 large red onion
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning or 1 teaspoon each parsley, basil, oregano.
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • fresh parsley optional

Instructions

  1. Preheat oven to 400 degrees F.
  2. Slice the sausage and zucchini so they are approximately the same thickness, about ¼ of an inch thick.
  3. Chop the onion so the pieces are approximately the same size as the sausage and zucchini.
  4. On a baking sheet, toss with olive oil, Italian seasoning, salt and pepper.
  5. Spread into a single layer.
  6. Bake for 10-15 minutes, until everything is slightly browned.
  7. Garnish with fresh parsley.
