Sausage Sheet Pan Dinner

Ingredients

  • 4 small red potatoes washed, sliced and cut into bite-sized pieces
  • 1 head broccoli washed and chopped
  • 1 yellow bell pepper sliced and seeded
  • 1 red bell pepper sliced and seeded
  • 1 cup fresh green beans trim the ends or 1 cup sliced zucchini
  • 4 sausage links sliced
  • ¼ cup olive oil divided
  • 1 teaspoon garlic salt with parsley flakes
  • ½ teaspoon dried basil
  • pepper
  • fresh parsley if desired

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with aluminum foil and lightly grease it with cooking spray. (You can also use parchment paper)
  2. Add potatoes to the pan and drizzle with some olive oil and season with garlic salt and pepper. Bake for 10 minutes.
  3. Remove from oven and add the remaining vegetables and sausage slices. Drizzle with the remaining olive oil and seasonings. Toss to coat.
  4. Bake for 20 minutes.
