Sautéed Mushrooms and Onions

Ingredients

  • 3 tablespoons butter
  • 1 large sweet onion cut into ¼" slices
  • 2 cloves garlic minced
  • ¼ cup white wine optional
  • 12 ounces mushrooms cut in half if small or ½-inch slices if large
  • 1 tablespoon soy sauce
  • ½ tablespoon chopped fresh parsley

Instructions

  1. Heat butter over medium heat in a large skillet.
  2. Add onions and cook until slightly softened, about 4-5 minutes. Add garlic and cook just until fragrant.
  3. Increase heat to medium high and add wine if using. Cook until almost evaporated, about 2-3 minutes.
  4. Add mushrooms and soy sauce and cook until mushrooms are cooked through and tender, 4-5 minutes more.
  5. Stir in parsley and serve.

Notes

  • This combo also tastes great with cream mixed in, but if adding it, consider leaving out the soy sauce for a milder flavor profile.
  • Don't let the onions burn, cook them slowly over medium heat.
  • I prefer softer onions so I start them first, the mushrooms need a bit less time.
  • Leftovers keep in the refrigerator up to 5 days.
