Ingredients
- 1 pound fresh baby spinach
- 2 tablespoons olive oil
- 2 cloves garlic minced
- 2 tablespoons pine nuts
- ¼ cup feta cheese crumbled
- salt and pepper to taste
Instructions
Cook the Spinach in the Microwave
- Wash the spinach under cold water, leaving it slightly damp.
- Place it in a microwave-safe bowl, cover it with a safe plate, and microwave on high for 3 minutes.
- Remove, transfer to a colander, and press to release water.
- Chop roughly on a cutting board and press again in the colander to remove excess moisture.

Toast the Pine Nuts
- Heat a large skillet over medium heat. Add the pine nuts and toast them for 2-3 minutes, stirring often, until golden and fragrant.
- Remove them from the skillet and set aside.
Sauté the Garlic
- In the same skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
Add the Spinach
- Stir the prepared spinach into the skillet. Sauté for 2-3 minutes, mixing it with the garlic.
Finish with Pine Nuts and Feta
- Stir in the toasted pine nuts and season with salt and pepper. Remove from heat and sprinkle with crumbled feta cheese.
Serve Immediately
