Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 medium yellow squash sliced
  • 1 medium zucchini sliced
  • 1/2 medium onion sliced
  • 1/2 teaspoon Italian seasoning
  • 2 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion to the skillet and sauté for 2 minutes until translucent.
  3. Add sliced yellow squash, zucchini, and garlic to the skillet. Season with Italian seasoning, salt, and pepper. Cook for about 7-10 minutes, stirring occasionally, until vegetables are tender and lightly browned.
