Sautéed Zucchini

Ingredients

  • 2 medium zucchini about 12 ounces
  • 1 tablespoon olive oil
  • ¼ teaspoon dried basil optional
  • ½ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper
  • 1 tablespoon butter
  • 2 cloves garlic minced

Instructions

  1. Slice zucchini to ½-inch thickness.
  2. Heat olive oil in a 12-inch skillet over medium-high heat. Toss zucchini with oil, basil, salt & pepper.
  3. Add seasoned zucchini and cook 3-4 minutes or until tender-crisp.
  4. Move the zucchini to one side of the pan and add butter and garlic to the other and cook briefly. Combine and cook until zucchini is tender, about 2 minutes more.
  5. Season with salt & pepper to taste.

Notes

  • If using extra large garden zucchini with tough seeds, slice in half lengthwise and scoop out the seeds with a spoon.
  • Cut into ¾-inch slices if you prefer firmer zucchini or crispier edges.
  • For a deeper flavor, add a sprinkle of parmesan cheese before serving if desired.
  • Leftovers can be stored in an airtight container in the fridge for up to 3-4 days, or in the freezer for up to one month.
