Savory cassava cheese bread waffles {Yuca bread waffles}
Savory cassava cheese bread waffles use tapioca starch combined with mozzarella and queso fresco or quesillo cheeses to create a pliable dough formed into patties and cooked in a waffle iron. The result is a crispy exterior with a chewy, cheese-filled interior. These waffles are ideal for serving with toppings such as avocado, smoked salmon, or eggs.
Ingredients
- 2 ½ cups tapioca starch also known as yuca or cassava flour, or tapioca flour
- 4 cups mozzarella cheese grated; can also use half mozzarella; half queso fresco or quesillo cheese
- 4 cups queso fresco
- 4 cups Quesillo Cheese
- Pinch salt
- 1 butter 1 stick = 4 oz or 113 grams, stick; softened
- 2 egg large
- ¼ cup of water or milk, add more as needed
Suggested toppings:
- avocado mashed or guacamole
- egg fried or poached
- smoked salmon
- prosciutto
- ham
- Bacon
- chorizo
- hot sauce
Instructions
- Place the cheese, tapioca flour, salt, softened butter, eggs, and ¼ cup of water in a large mixing bowl.
- Use your hands to mix the ingredients until you have a smooth dough. Add additional water, a tablespoon or two at a time if the dough feels dry.
- You can also make the dough in the food processor. Add the dry ingredients first, mix, and then add the wet ingredients, and mix until you have a clumpy dough.
- Form the dough into medium to large patties. You can make these in advance and refrigerate until ready to make the waffles.
- Heat the waffle maker as you usually would for regular waffles. Place the cheese bread patty on the center for a round waffle maker, close the waffle maker, and let it cook until crispy. Usually about 5 minutes. Open it gently when checking for doneness.
- Remove the waffle(s), top with your preferred toppings and serve immediately.
