Savory cassava cheese bread waffles {Yuca bread waffles}

Savory cassava cheese bread waffles use tapioca starch combined with mozzarella and queso fresco or quesillo cheeses to create a pliable dough formed into patties and cooked in a waffle iron. The result is a crispy exterior with a chewy, cheese-filled interior. These waffles are ideal for serving with toppings such as avocado, smoked salmon, or eggs.

Description

This recipe transforms tapioca starch (also called yuca or cassava flour) with mozzarella, queso fresco, and quesillo cheeses into a dough enriched with softened butter, eggs, and a bit of water. The dough is mixed by hand or food processor until smooth, then shaped into patties suitable for waffle making.

Cooking the patties in a preheated waffle maker crisps the outside while melting the cheeses inside, producing savory waffles with a golden crust and soft, chewy crumb. The combination of cheeses adds both stretchiness and slight tang.

The waffles are versatile and can be topped with items like mashed avocado, various cured meats, fried or poached eggs, or hot sauce, making them a flavorful breakfast or snack choice. They can be prepared in advance and refrigerated before cooking.

Ingredients

Servings
  • 2 ½ cups tapioca starch also known as yuca or cassava flour, or tapioca flour
  • 4 cups mozzarella cheese grated; can also use half mozzarella; half queso fresco or quesillo cheese
  • 4 cups queso fresco
  • 4 cups Quesillo Cheese
  • Pinch salt
  • 1 butter 1 stick = 4 oz or 113 grams, stick; softened
  • 2 egg large
  • ¼ cup of water or milk, add more as needed

Suggested toppings:

  • avocado mashed or guacamole
  • egg fried or poached
  • smoked salmon
  • chorizo
  • prosciutto
  • ham
  • Bacon
  • hot sauce

Instructions

  1. Place the cheese, tapioca flour, salt, softened butter, eggs, and ¼ cup of water in a large mixing bowl.
  2. Use your hands to mix the ingredients until you have a smooth dough. Add additional water, a tablespoon or two at a time if the dough feels dry.
  3. You can also make the dough in the food processor. Add the dry ingredients first, mix, and then add the wet ingredients, and mix until you have a clumpy dough.
  4. Form the dough into medium to large patties. You can make these in advance and refrigerate until ready to make the waffles.
  5. Heat the waffle maker as you usually would for regular waffles. Place the cheese bread patty on the center for a round waffle maker, close the waffle maker, and let it cook until crispy. Usually about 5 minutes. Open it gently when checking for doneness.
  6. Remove the waffle(s), top with your preferred toppings and serve immediately.
