Savory Galette Recipe with Meat & Potatoes

Rustic savory galette with meat and potatoes. This hearty meal can be served as a main dish or as an appetizer.

Ingredients

Galette Dough
  • 1 1/2 cups all purpose flour
  • ½ teaspoon salt
  • 3 tablespoons unsalted butter chilled and diced in small pieces
  • ¼ cup sour cream
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons ice water
  • 1 egg whisked (optional)
Galette Meat and Potato Filling
  • 1 tablespoon oil vegetable or olive
  • 1 large russet potato peeled and diced
  • 1 small onion finely chopped
  • 1 pound beef sirloin diced
  • 2 cups cabbage finely shredded
  • ¼ cup tomato sauce
  • 1 teaspoon Worcestershire sauce 
  • 1 teaspoon fresh thyme
  • 1/2 cup water
  • salt and pepper to taste

  1. Galette Dough
  2. In a medium size mixing bowl whisk together flour and salt. Set aside.
  3. With a pastry blender cut in the butter into the flour mix.
  4. In a sperate small mixing bowl mix together the sour cream and lemon juice.
  5. Add sour cream mix to the flour and gently toss through the flour using a fork.
  6. Add one tablespoon of water to the top of the dough mix and fold into the mix with a fork. Repeat process two more times using the remaining 2 tablespoons of ice water.
  7. With you hands form dough into a 4-5 inch round disk. Cover with plastic wrap and place into the refrigerator will preparing filling.
  8. Galette Filling
  9. In a large skillet add oil and heat over medium-high heat. Add onion and potatoes. Cook stirring every 2 minutes for 6-7 minutes or until the potato is tender and the onion is fragrant.
  10. Reduce heat to medium and add beef and cook an additional 5 minutes or until the beef is no longer pink.
  11. In a small mixing bowl whisk together tomato sauce, Worcestershire sauce, thyme and water. Fold into skillet with the galette filling.
  12. Add cabbage and fold into filling mixture. Cover with a lid and turn heat to simmer. Simmer for 5 minutes or until the cabbage softens.
  13. Roll Galette Pastry
  14. Remove dough from the refrigerator, unwrap from plastic wrap and place on a hard surface lined with parchment paper. Add another piece of parchment paper to the top of the dough.
  15. Roll dough into a large round circle. You will want approximately a 13" round shape.
  16. Place the pie crust on a baking sheet. Refrigerate until ready to fill.
  17. Assemble Galette
  18. Remove top layer of the parchment paper from the prepared dough.
  19. Spoon filling into the center of the dough leaving 2-inches from the edges unfilled.
  20. Fold edges over the filling.
  21. Whisk egg in a small bowl and brush on exposed dough with a pastry brush.
  22. Bake at 400°F degrees for 10-12 minutes or until the crust turns a light golden brown.

Notes

  • Steak sauce can be used in place of Worcestershire sauce.
  • Cabbage can be replaced with kale or chard. If you replace the cabbage with spinach the cooking time should be reduced to 2 minutes or less.
