Scottish Shortbread Fingers Recipe

This is a delicious, authentic Scottish shortbread recipe that is simple to make and delicious to eat. I’ve been making this recipe for many years, the buttery sweet shortbread always turns out perfect.

Ingredients

  • 1 cup butter room temperature
  • 1 cup cornstarch
  • 1 2/3 cups all purpose flour
  • 2/3 cup super fine sugar

  1. In a food processor or stand mixer with the paddle attachment, cream the butter and sugar together until light and fluffy.
  2. Sieve the flour and cornstarch into the butter mixture and mix until the shortbread dough comes together.
  3. Transfer the dough to a 2 X 8 square pan and press firmly, smoothing the top.
  4. Prick holes over the surface using a fork, then lightly score the top to resemble the traditional Scottish fingers, 1 1/2 inches by 3 inches in length.
  5. Place into the oven and bake at 325°F or 325°C for 45-50 minutes, or until golden at the surface.
  6. Remove the cookies from the oven and cut through over the scored area. Then cover the top with sugar.
  7. Allow the shortbread to cool in the pan.
