Scrambled Egg Recipe with Turkey Sausage, Sun-Dried Tomatoes & Basil

Ingredients

  • 8 links turkey breakfast sausage cut into ½-inch pieces
  • ¼ cup thinly sliced sun-dried tomatoes
  • 4 whole eggs
  • 4 egg whites
  • 6 tablespoons water
  • 2 tablespoons thinly sliced fresh basil
  • salt and pepper to taste

Instructions

  1. Coat a medium skillet with cooking spray and set over medium-high heat.
  2. Add turkey sausage pieces and cook until the sausage is golden brown and cooked through, stirring occasionally.
  3. Add sun-dried tomatoes and saute for 1 additional minute. Set aside
  4. In a medium bowl, whisk together eggs, egg whites and water.
  5. Heat a large nonstick skillet over medium heat. Coat with cooking spray.
  6. Add eggs and let cook, without stirring the eggs, until they begin to set.
  7. Using the back of a spatula, push the eggs across the pan. Let set again and continue until the eggs are cooked.
  8. Gently stir in the sausage, sun-dried tomatoes and basil. Season with salt and pepper. Serve.
