Scrambled Eggs with Cottage Cheese

Ingredients

  • 3 large eggs
  • ¼ cup of cottage cheese 2% or full-fat both work great
  • salt and pepper to taste

Instructions

  1. Heat a nonstick skillet over medium-low heat and spray with oil.
  2. In a bowl, whisk together the eggs, cottage cheese, salt, and black pepper.
  3. Pour the egg mixture into the skillet and reduce the heat to low.
  4. Stir continuously with a silicone spatula, keeping the eggs moving, until they are soft and just beginning to set—about 2 minutes.
  5. Remove from the pan immediately to prevent overcooking.
  6. Season with extra salt and pepper if desired. I love serving these creamy scrambled eggs with a slice of toasted and buttered sourdough. Enjoy!
