Ingredients

  • 4 tablespoons butter
  • 1 cup half-and-half half milk and half cream
  • 1½ ounces lobster stock also called lobster glace or fruit de mer, reduction
  • 2 tablespoons basil pesto
  • 1 tablespoon lemon juice fresh
  • ¼ cup Parmesan Cheese grated
  • 1 scallion

Instructions

    Cup of Yum
  1. Thinly slice the scallion separating the white end from the green end.
  2. In a sauce pan on medium high heat, add the butter and melt.
  3. Add the Half & Half, lobster stock reduction and whisk until blended.
  4. Simmer the sauce, whisking until slightly reduced (by about ¼).
  5. Add the basil pesto, lemon juice, sliced white scallion and Parmesan cheese and whisk until thoroughly blended.
  6. Remove from heat, plate, top with green slice scallion and serve.

Notes

  • The only prep is to get the ingredients together so you don't have to stop once you start making the sauce. If you buy ungrated cheese and I hope you do, now would be a good time to grate it.
  • That's it. Couldn't be more simple, but you won't believe how good it is because you are starting with a great base for the sauce.
