Seasoned Biscuits and Gravy Bombs
Description
Seasoned Biscuits and Gravy Bombs offer a distinctive twist on classic biscuits and gravy by enclosing a thick pork sausage gravy inside buttery biscuit dough. Ground pork sausage is cooked and thickened with flour and milk into a smooth gravy seasoned with black pepper and garlic powder. This mixture is spooned onto flattened buttermilk biscuits, which are then sealed to trap the savory gravy inside. The bombs are brushed with a seasoned butter made with Lawry's Seasoned Salt before baking at 375°F until they develop a golden crust. Brushing additional seasoned butter after baking enhances the flavor and moisture. The dish is garnished with parsley for a fresh contrast. These bursts of gravy-filled biscuit dough deliver a rich, satisfying texture contrast and can be made using an oven or air fryer according to preference.
The biscuits and gravy bombs serve well as a filling breakfast or brunch item, providing a convenient handheld option for classic flavors.
A compound seasoned butter can be prepared ahead with butter and Lawry's Seasoned Salt to coat the biscuit bombs before and after baking. When using an air fryer, arrange the bombs in a single layer and air fry at 350°F for 9-10 minutes until golden. This allows a crisp exterior while keeping the gravy hot and contained inside.
Ingredients
- ½ pound ground pork sausage
- 2 tablespoons all-purpose flour
- 1 ¼ cups whole milk room temperature, 306 g
- ¼ teaspoon black pepper
- ⅛ teaspoon garlic powder
- 1 can buttermilk biscuits not flaky, 8-count; Southern homestyle
- ¼ cup butter snack spread softened, divided, with Lawry's Seasoned Salt
- parsley for garnish
Instructions
- In a skillet over medium heat, brown pork sausage until it reaches an internal temperature of 160°F.
- Reduce the heat to medium-low. Add the flour, stirring to combine. Slowly pour in the milk. Stir frequently until the mixture thickens (about 8-10 minutes). Add pepper and garlic powder. Set aside to cool slightly.
- Preheat the oven to 375°F.** Spray a 12-inch oven-safe skillet with nonstick cooking spray.
- Remove the biscuits from the can and place them on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness.
- Place 2 heaping tablespoons of the sausage mixture on top of each flattened biscuit. Pinch the edges of the biscuit together to seal the mixture inside.
- Place the sealed biscuits, seam-side down, into the prepared skillet. Brush the tops with the seasoned butter, reserving some to brush over the warm biscuits.
- Bake for 18-20 minutes or until golden brown. Brush with the remaining seasoned butter. Serve warm, garnished with parsley.
Notes
- Prepare seasoned butter by mixing softened butter with Lawry's Seasoned Salt and chilling it to firm up before use.
- For air fryer cooking, place biscuit bombs in a single layer on parchment and air fry at 350°F for 9-10 minutes until golden brown.
- Brush biscuits with seasoned butter before and after baking or air frying to enhance flavor and moisture.
