Sesame Broccoli

Sesame Broccoli combines lightly blanched broccoli florets and stems tossed with roasted crushed sesame seeds, sesame oil, and minced garlic, resulting in a tender, flavorful vegetable side dish with nutty and aromatic notes. The quick blanch preserves the broccoli's bright green color and crisp-tender texture.

Ingredients

  • 1 pound broccoli
  • 1 teaspoon salt for blanching
  • 1 tablespoon sesame seeds roasted and crushed
  • 1 tablespoon sesame oil
  • 1/2 teaspoon garlic minced
  • salt about 1/2 teaspoon, to taste

Instructions

  1. Cut the broccoli head from the stem. Cut the head into small florets. Peel the stems and cut into small pieces.
  2. Bring a large pot of water to a boil. Add a teaspoon of salt and broccoli, and cook for 1 to 2 minutes, or until it reaches the desired tenderness.
  3. Drain, and immediately shock in cold water to stop cooking. Drain well.
  4. Combine the broccoli with the remaining ingredients, and toss well to evenly distribute the seasoning.

Notes

  • Roast sesame seeds over medium-low heat for 4–5 minutes, stirring occasionally until fragrant and golden.
  • Crush roasted sesame seeds lightly using a blender or grinder, pulsing a few times without pulverizing fully.
