Ingredients

  • 1 pound linguine
  • 2 chicken breasts , cooked, boneless, chopped in 1-inch cubes
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 cup green onions , chopped
  • 5 garlic cloves , minced
  • 1 tablespoon ginger , minced or paste
  • 1/4 cup honey
  • 1/4 cup creamy peanut butter
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons rice vinegar
  • 1 teaspoon Sriracha
  • 1 tablespoon sesame seeds
  • 1/2 cup salted peanuts , roughly chopped

Instructions

  1. Cook pasta in a large pot of boiling water one minute shy of the directions on the box.
  2. Drain then toss with sesame oil.
  3. Add vegetable oil, green onions, garlic, and ginger to a large skillet on medium heat and cook for 1 minute, stirring halfway through.
  4. Add honey, peanut butter, soy sauce, and rice vinegar.
  5. Bring to a boil then add in the pasta, chicken, and sesame seeds, tossing well to coat.
  6. Garnish with peanuts.
