Shakshuka Hummus Toast

This shakshuka hummus toast is a healthy and hearty way to start the day. Ras el hanout roasted tomatoes served on top of hummus toast with a fried egg, fresh cilantro, and tangy feta cheese. You'll love this savory breakfast dish!

Ingredients

  • 1 large beefsteak tomato
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon ras el hanout spice blend
  • 2 slices whole wheat bread thick sliced
  • 4 tablespoons hummus
  • 1 tablespoon olive oil
  • 2 large eggs
  • minced cilantro for topping
  • crumbled Feta cheese for topping
  • black sesame seeds for topping
  • crushed red pepper for topping

Instructions

  1. Preheat oven to 425 degrees F.
  2. Slice the tomato into 4 thick slices. Place on a small baking sheet and sprinkle both sides with kosher salt, black pepper, and ras el hanout.
  3. Add the tomatoes to the preheated oven and bake for about 10 minutes or until the tomatoes are slightly soft and fragrant.
  4. While the tomatoes roast, toast your bread and spread 2 tablespoons of Sabra original hummus on each slice of the bread.
  5. Add 2 roasted tomato slices to each slice of bread.
  6. In a small skillet add olive oil and place over medium-high heat. Fry both eggs until the desired doneness.
  7. Add the egg to the toast and garnish with minced cilantro, crumbled feta cheese, black sesame seeds, and crushed red pepper.
  8. Season with extra kosher salt or black pepper if needed.
