Shanghai Fried Noodles

Shanghai fried noodles (Chinese: 上海 粗 炒; pinyin: Shànghǎi Cūchǎo) are a dish made with stir-fried noodles, a staple food in China and especially in Shanghai.

Ingredients

For the pork and marinade
  • 6 oz. pork cut into strips or very thin slices, lean
  • 1 teaspoon cornstarch
  • ½ teaspoon soy sauce light
  • ½ teaspoon black soy sauce
  • 1 teaspoon Shaoxing wine
  • ½ teaspoon sugar
For the rest of the recipe
  • 3 tablespoons neutral cooking oil divided, generic cooking oil
  • 8 shiitake mushrooms (fresh or dry), thinly sliced
  • 2 scallions finely chopped
  • 1 tablespoon ginger grated fresh
  • 16 oz. Shanghai noodles (or Japanese-style udon noodles), fresh
  • 2½ teaspoons dark soy sauce (black soy sauce)
  • 2½ teaspoons soy sauce
  • ¼ teaspoon sugar
  • 1 choy sum or baby bok choy), trimmed and rinsed, bunch

Instructions

  1. In a bowl, mix the pork and all the ingredients necessary for the marinade and let stand for 15 minutes.
  2. Meanwhile, heat a tablespoon of oil in a wok over high heat. Add the pork and marinade and sauté until golden.
  3. Reduce the heat, remove the pork from the wok and set aside.
  4. Heat the remaining oil in the wok and sauté the scallions, ginger, and mushrooms for about 2 minutes over medium heat.
  5. Gently untangle the noodles and add them to the wok.
  6. Add the soy sauces and sugar.
  7. Add the pork and sauté everything together until the noodles take on a uniform dark brown color. Add a little dark soy sauce, if necessary.
  8. Add the leafy greens and mix with the noodles until the leaves are wilted.
  9. Serve the hot noodles, possibly accompanied by Chinese black vinegar.
