Shaved Apple Salad

This apple salad is made with tart Granny Smith apples, and savory ingredients to make the perfect combination for sandwiches, or burgers.

Ingredients

  • 1 tbsp olive oil
  • 2 tbsp capers
  • 3 granny smith apples, sliced thin and chopped into matchsticks
  • 1/4 cup minced fresh dill
For the dressing
  • 1/4 cup olive oil
  • 1 tbsp grainy mustard
  • juice from one lemon
  • 1 tbsp maple syrup
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  1. To a small frying pan add 1 tbsp olive oil and turn to medium heat. Once the pan is hot, fry the capers for a few minutes until starting to crisp. Remove from the heat and set aside.
  2. Mix together all of the dressing ingredients and set aside.
  3. Add sliced apple, fresh dill and fried capers to a medium bowl. Drizzle with the dressing and gently toss the salad. Enjoy!
