Ingredients
- 4 cups Brussels sprouts shaved
- 1 medium honeycrisp apple sliced
- 1/2 cup pomegranate arils
- 1/3 cup pine nuts toasted
- 1/3 cup Parmesan Cheese shaved
Brussels Sprout Salad Dressing
- 1/4 cup extra virgin olive oil
- 3 tbsp lemon juice
- 2 tbsp honey
- 1/2 tsp salt
Instructions
- In a jar or small bowl, whisk all the dressing ingredients together until smooth (oil, lemon juice, honey, and salt).
- Place the shaved Brussels sprouts in a large bowl. Add the apple, pomegranate arils, toasted pine nuts, and Parmesan cheese.
