Ingredients

  • 4 cups Brussels sprouts shaved
  • 1 medium honeycrisp apple sliced
  • 1/2 cup pomegranate arils
  • 1/3 cup pine nuts toasted
  • 1/3 cup Parmesan Cheese shaved
Brussels Sprout Salad Dressing
  • 1/4 cup extra virgin olive oil
  • 3 tbsp lemon juice
  • 2 tbsp honey
  • 1/2 tsp salt

Instructions

  1. In a jar or small bowl, whisk all the dressing ingredients together until smooth (oil, lemon juice, honey, and salt).
  2. Place the shaved Brussels sprouts in a large bowl. Add the apple, pomegranate arils, toasted pine nuts, and Parmesan cheese.
  3. Pour the dressing over the salad, toss to coat, and enjoy!
