Ingredients

Shaved Brussels Sprouts Salad
  • 1 pound brussels sprouts, shredded
  • 1/2 cup pomegranate seeds
  • 1 apple, chopped
  • 1/2 cup Chopped Pecans
  • 1/4 cup shaved Parmesan cheese
Apple Cider Vinaigrette
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 teaspoons spicy brown mustard (or any type of mustard)
  • 1 teaspoon minced garlic  (about 1 clove)
  • 1/4 teaspoon Italian seasoning
  • salt and pepper
  • 2 tablespoons honey

Instructions

Shaved Brussels Sprouts Salad

  1. Toss all ingredients under Shaved Brussels Sprouts Salad above.
  2. Pour Apple Cider Vinaigrette dressing over the top of the salad and toss so that the dressing covers all the salad.
Apple Cider Vinaigrette Dressing
  1. In a small bowl stir together all ingredients under Apple Cider Vinaigrette dressing.
  2. Pour dressing over the salad and toss. Serve immediately or refrigerate until ready to serve.

Notes

  • If you are having a party, you can make this salad several hours in advance and store covered in the refrigerator.
  • Save time by using a food processor to shred the Brussels Sprouts.
  • If you can't find Pomegranate Ariels or seeds, then you can use dried cranberries instead.
