Ingredients
Shaved Brussels Sprouts Salad
- 1 pound brussels sprouts, shredded
- 1/2 cup pomegranate seeds
- 1 apple, chopped
- 1/2 cup Chopped Pecans
- 1/4 cup shaved Parmesan cheese
Apple Cider Vinaigrette
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- 2 teaspoons spicy brown mustard (or any type of mustard)
- 1 teaspoon minced garlic (about 1 clove)
- 1/4 teaspoon Italian seasoning
- salt and pepper
- 2 tablespoons honey
Instructions
Shaved Brussels Sprouts Salad
- Toss all ingredients under Shaved Brussels Sprouts Salad above.
- Pour Apple Cider Vinaigrette dressing over the top of the salad and toss so that the dressing covers all the salad.

- In a small bowl stir together all ingredients under Apple Cider Vinaigrette dressing.
- Pour dressing over the salad and toss. Serve immediately or refrigerate until ready to serve.
Notes
- If you are having a party, you can make this salad several hours in advance and store covered in the refrigerator.
- Save time by using a food processor to shred the Brussels Sprouts.
- If you can't find Pomegranate Ariels or seeds, then you can use dried cranberries instead.
