Shaved Kale and Brussels Sprout Salad with Pomegranate, Apple, Sharp Cheddar, Sugared Pecans and White Balsamic Vinaigrette

Ingredients

White Balsamic Vinaigrette:
  •  
  • 2 tbsp canola oil
  • 2 tbsp olive oil
  • 4 tbsp white balsamic vinaigrette less if you prefer less tangy dressing
  • 1 clove of garlic minced
  • Pinch of sugar to taste
  • Sea Salt and Freshly Cracked Pepper to taste
Salad:
  • 10 oz Shaved kale, Brussels sprouts, and cabbage
  • pomegranate seeds
  • green apple diced
  • sharp white cheddar diced
  • Sugared pecans

Instructions

  1. Combine the vegetable oil, olive oil, white balsamic vinegar, minced garlic, sugar, sea salt, and freshly cracked pepper, to taste. Mix until well combined. Side Note: We prefer a tangier vinaigrette which is why I do equal parts oil and vinegar. If you prefer a less tangy vinaigrette, use half the vinegar.
  2. Combine the shaved kale, Brussels sprouts, and cabbage in a bowl.
  3. Top with the pomegranate seeds. green apple, sharp cheddar, and sugared pecans.
  4. Drizzle the white balsamic vinaigrette, to taste. Serve and enjoy.
