Sheet Pan Apple Cider Glazed Salmon

Celebrate apple season with this delicious Sheet Pan Apple Cider Glazed Salmon.  It's easy to prepare and the salmon tastes great slathered with apple cider sauce. {gluten free}

Ingredients

  • 3 salmon pieces of
  • 1 cup apple cider fresh
  • 1 teaspoon honey
  • 1 teaspoon grainy mustard
  • 2 cups zucchini assorted
  • 2 cups peppers
  • 2 cups onion

Instructions

    Cup of Yum
  1. Preheat oven to 400 degrees.  Heat apple cider to boiling in a small saucepan.  Boil until it reduces by half or about 10 minutes.  
  2. Remove from heat and whisk in honey and grainy mustard.
  3. Place salmon on a sheet pan, skin side down.  Brush generously with the apple cider sauce.
  4. Place cut vegetables in a bowl and drizzle with olive oil, salt, and pepper and toss well with your hands.
  5. Place vegetables around the salmon. 
  6. Cook until salmon is cooked through for about 15-20 minutes.  Brush with remaining sauce halfway through.
